Course description:An extension of CA 125. This course offers students the opportunity to reinforce skills with daily production for real-world deadlines. In addition, students will become familiar with many plated desserts found in the modern kitchen. Cakes, custards, tarts, crepes and other pastries will be covered, as will traditional and modern methods for presentation of these items. (Even S)
