Course description:Fundamentals of baking science, terminology, equipment, ingredients, weights and measurements. Students will prepare a variety of breads and bread products from many international cultures. In addition, a focus will be placed on student demonstrations/presentations. Prerequisites: CA102, 104/L, 105/L, or instructor approval. Concurrent enrollment: CA 334L. (F)
